Ground Beef Asian Lettuce Wraps

This recipe is great because not only is it so quick and easy, but it is low carb. When I have very little time to whip something up, this is my go to meal. It is inspired by everyone’s favorite PF chang’s lettuce wraps and their chicken jimaca tacos. This is my at home fusion! Great for serving as an appetizer to an asian inspired meal, or on its own for lunch. I also serve it as a quick and healthy dinner accompanied by a chinese soup.

Serving Size: 10 wraps (if this is the main dish, expect 3-4 per person)

Ingredients

  • 1lb lean ground beef
  • 1 or 2 heads of butter lettuce (depending on size at your grocery store). Enough for 8 large leaf wraps or more small ones.
  • 1/4 cup finely diced onions
  • 1 cup chopped mushrooms small
  • 1tsp finely chopped garlic
  • 1tsp finely chopped ginger
  • 3 tbsp sesame oil
  • 4 tbsp soy sauce
  • 4 tbsp teriyaki sauce
  • 4 tbsp sriracha
  • 2 tbsp rice wine vinegar
  • 1/4 cup hoisin sauce
  • 1/2 tsp salt
  • 1 tsp chili flakes
  • 1/4 cup freshly chopped cilantro

The following  are all toping options that can be used in combination based on your taste and pantry:

  • broccoli and carrot slaw (store bought packet)
  • bean sprouts
  • cucumber cut 2 inch long and thin like shoestrings
  • crushed peanuts
  • thinly sliced jalepeno or red serrano peppers
  • sliced green onions/ scallions
  • sriracha

Instructions

  1. Heat large skillet or wok with sesame oil on medium heat.
  2. In a small bowl, combine soy sauce, sriracha, rice wine vinegar, salt, pepper and chili flakes.
  3. Add your ground beef to the pan with the prepared mixture, along with the ginger and garlic.
  4. Using your spoon, break up the beef in the pan as it is drying.
  5. After about 6 minutes, add the onions and mushrooms.
  6. Once the beef is all dry and cooked, add in your hoisin sauce, and teriyaki sauce. You can add some more sriracha to your taste at this time too.
  7. Allow your meat to simmer for about 3-4 minutes on a lower heat.
  8. Separate leaves from the butter lettuce head and give it a good wash and dry.
  9. You can now turn off the stove and start to assemble your wraps
  10. You can pre assemble your wraps by adding in some meat mixture on the lettuce, followed by cilantro, and then your choice of toppings from my list above. Another option is to serve the lettuce, meat, and a combination of toppings separately to allow diners to prepare their own personalized version. Serve immediately. 

*I recommend to always include fresh cilantro, sriracha, and something crunchy as your toppings*
