Summer in California is peak season for ripe, juicy, organic tomatoes. Our local farmers markets are flooded with bright red, orange, and green heirlooms. This quick and easy recipe was inspired by my husband’s love for tomatoes! It is simple, but looks classy and beautiful. This dish works great as an appetizer or a side dish to your meals. You can find these tomatoes at your local farmer’s market, or Trader Joe’s.
Ingredients
- any assortment of colorful heirloom tomatoes
- soft mozzarella cheese
- fresh basil
- balsamic vinegar
- extra virgin olive oil
- sea salt
- freshly cracked pepper
Instructions
- Slice your tomatoes 1/4 inch thick.
- Slice the mozzarella cheese 1/4 inch thick.
- Start with a larger slice of tomato, then layer a slice of the cheese and then smaller slices of tomatoes on top, creating almost a pyramid shape.
- Chop the fresh basil and sprinkle over the tomatoes.
- Drizzle balsamic vinegar and the olive oil over the top.
- Sprinkle some sea salt and freshly cracked black pepper to finish your dish.
