To this date, the most exciting breakfast in our house is channa bhatura. The perfect accompaniment to the spicy Channe was a hot and sweet Sooji ka Halwa. This dish only takes a few ingredients, but it is delightful! I also make it as a quick option for when I’m in the mood for a Pakistani dessert or when I have guests over for tea. This will definitely be your go to recipe for a quick Pakistani sweet dish.

Base
- 1 cup semolina flour
- 3/4 cup unsalted butter
Syrup
- 4 cup water
- 1 1/2 cup sugar
- 2 cardamom pods
- 1/4 tsp of orange food coloring
Instructions
- In a medium pot, combine the syrup ingredients and bring to a boil for 5 minutes.

- In a separate pot, brown the semolina flour in the butter on low heat until the base is golden brown.

- Then add the syrup to the base and let thicken for about 2-4 minutes while stirring (you can now take out the 2 cardamoms).
- You want to turn off the heat while it is still slightly wet because it will be firmer when cooled.
- When ready, transfer to your serving dish because it will mold in to whatever you pour it in.
- Serve hot and fresh as a dessert, or to the side of channe (chickpea curry) for brunch.
* Although I prefer it nut-free, you have the option of adding sliced almonds at step 3 or as a topping. You can also freeze this and heat it up at a later date to keep for last minute company*
