Fall is here! Which means, pumpkin EVERYTHING. This recipe was inspired by the common Cinnamon Roll French Toast Bake and my new favorite breakfast spot, “Orphan”, that serves Pumpkin Spice Pancakes! The preparation is fairly easy but just requires some patience for it to bake. This dish is so aromatic that baking it in your kitchen will wake up everyone in your home to the sweet, nutty scent of fall.

Ingredients
- 1 pumpkin roll (Trader Joe’s)
- 1/3 cup whipping cream

- 2 eggs
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 cup maple syrup
- 1/3 cup small pecan pieces
- baking spray or 3 tbsp melted butter
Instructions
- Preheat Oven to 350F.
- Spray an 8×8 square baking dish with baking spray or brush with butter.
- Remove the rolls from the casing and lay out on chopping board.

- Cut each roll in to about 8 pieces each and then transfer to dish.

- Whisk together eggs, cream, vanilla, and cinnamon, and then pour evenly over dish.
- Now sprinkle on the pecans, and then drizzle the maple syrup over top.

- Bake in the middle rack for around 25-30 minutes or until the top is golden brown.
- Let cool for a few minutes before serving.

- Warm up the included icing for around 20 seconds and drizzle over individual slices.
