the best chocolate chip cookies ever.

Nothing is more comforting than some homemade, soft, warm, chewy chocolate chip cookies. There’s not much I can say about these… except that they are exactly that. After trying multiple recipes and experimenting in my kitchen, I have come to conclude that no chocolate chip cookie recipe can compete with this one.

Preparation Time: 40 minutes
Cooking Time: 12 minutes
Serving Size: 20 cookies

Ingredients

  • 1 cup melted and then cooled to room temperature
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 1/4 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 2 tsp cornstarch
  • 1 tsp salt
  • 1½ cups milk chocolate chips (I prefer milk but you are welcome to use dark)

Directions:

  1. Mix together the butter, sugars, and vanilla extract with a whisk or hand blender.
  2. Add in the eggs and beat until combined. img_8865
  3. In another bowl, combine your dry ingredients together- flour, baking soda, cornstarch, and salt.
  4. Slowly add the dry ingredients to your egg mixture, and mix with rubber spatula until there are no flour clumps left.img_8868
  5. Fold in the chocolate chips.
  6. Wrap the dough tightly in plastic wrap and refrigerate for at least 2 hours but preferably overnight.
  7. When ready to bake, preheat your oven to 325 degrees and remove the dough from your fridge.
  8. Roll 1/4 cup of dough in to a ball at a time and then tear in half. Next, smush the halves together- keeping the torn/rough sides facing up. This method will give you the rustic cafe cookie look.

    The purpose of the tearing and smushing is just to achieve this texture on top.

  9. Space out your cookies on a parchment paper or foil on a baking tray as they will spread out a lot.

    I usually have 5-6 cookies per tray to ensure they have have room to expand

  10. Bake for a total of 12 minutes, and ensure to rotate your pan at the 6 minute mark for evenness. The cookie edges should be golden and the centre should look slightly undercooked. This is the prime time to take out your cookies to make sure they are soft and chewy.

  11. Let cool until the cookies are firm enough to remove. (Be patient, you don’t want them to stick or break!)
  12. Repeat for the rest of your batches from step eight and on.
  13. Serve with a cold glass of milk!
