Cream of Asparagus Soup


Cooking Time: 45 minutes

Ingredients

  • 3 tbsp Salted Butter 
  • 1/2 Yellow Onion
  • 4 large garlic cloves (6 if smaller cloves)
  • 1 lb Asparagus
  • 1 1/2 cup Chicken Stock (vegetarian stock if dietary restrictions)
  • 1/2 cup Whipping Cream
  • 3/4 tsp Salt (more or less to taste)
  • Freshly Cracked Pepper (aprox 8 cracks or to taste)

Directions

  1. Wash and cut the asparagus stems in to about 2 inch pieces and set aside. 
  2. Dice half the onion and crush your fresh garlic. 
  3. Combine the butter and diced onions in a medium pot on a low heat setting. Mix frequently for about 6 minutes until softened.img_0720_192
  4. Add in the crushed garlic and stir frequently for another 3 minutes.img_0722_41
  5. Mix in the prepared asparagus and sauté for 6 minutes.img_0723_219
  6. Add in the stock and whipping cream and raise the heat to a medium setting for 15 minutes. 
  7. Transfer everything in to a food processor or blender and blend for at least a minute until very smooth.
  8. Pour everything back in to the pot and add in the salt and pepper. Cover and let simmer on low heat for another 10 minutes.
