Ingredients
- 3 tbsp Salted Butter
- 1/2 Yellow Onion
- 4 large garlic cloves (6 if smaller cloves)
- 1 lb Asparagus
- 1 1/2 cup Chicken Stock (vegetarian stock if dietary restrictions)
- 1/2 cup Whipping Cream
- 3/4 tsp Salt (more or less to taste)
- Freshly Cracked Pepper (aprox 8 cracks or to taste)
Directions
- Wash and cut the asparagus stems in to about 2 inch pieces and set aside.
- Dice half the onion and crush your fresh garlic.
- Combine the butter and diced onions in a medium pot on a low heat setting. Mix frequently for about 6 minutes until softened.

- Add in the crushed garlic and stir frequently for another 3 minutes.

- Mix in the prepared asparagus and sauté for 6 minutes.

- Add in the stock and whipping cream and raise the heat to a medium setting for 15 minutes.
- Transfer everything in to a food processor or blender and blend for at least a minute until very smooth.
- Pour everything back in to the pot and add in the salt and pepper. Cover and let simmer on low heat for another 10 minutes.

Serve Hot.
