Grilled Mexican Corn- “Elotes”

Its BBQ season, and the corn is sweet! Californians love Mexican food, and we can’t get enough of this fresh and tangy street corn. Here is a delicious idea for your next mid day snack or appetizer to your taco night!

Preparation Time: 8 Minutes
Cooking Time: 15 minutes 
Serving Size: 6

Ingredients

  • 6 Ears of Corn
  • 5 tbsp Salted Butter 
  • 1/4 cup Mayonnaise 
  • 1 Lime
  • 1/4 tsp Chili Powder
  • 1/4 tsp Paprika Powder
  • 1/4 tsp Garlic Powder
  • 1/3 tsp Salt 
  • Freshly Cracked Pepper 
  • 1 and 1/2 cup Soft Cojita Cheese (Feta may be used as a substitute) 
  • 1 Cup Freshly Chopped Cilantro

Directions

  1. Preheat your BBQ Grill to the highest setting. 
  2. Before peeling your corn, put them in the microwave on high for 8 minutes.
  3. Once ready, let cool.IMG_1493.JPG
  4. In a bowl, mix the mayonnaise, juice of your lime, and all the seasonings/spices together. 
  5. Peel the corn and place on your Grill. Close the hood and rotate occasionally with tongs until lightly charred.IMG_1499
  6. After approximately 10 minutes, remove from Grill and immediately rub each ear with butter. 
  7. Now using a brush (preferably rubber), coat your corn generously with the marinade you prepared. 
  8. Crumble the Cojita cheese with your fingers and sprinkle on to your corn. 
  9. Sprinkle Cilantro over your platter of corn and serve immediately.
