Its BBQ season, and the corn is sweet! Californians love Mexican food, and we can’t get enough of this fresh and tangy street corn. Here is a delicious idea for your next mid day snack or appetizer to your taco night!

Ingredients
- 6 Ears of Corn
- 5 tbsp Salted Butter
- 1/4 cup Mayonnaise
- 1 Lime
- 1/4 tsp Chili Powder
- 1/4 tsp Paprika Powder
- 1/4 tsp Garlic Powder
- 1/3 tsp Salt
- Freshly Cracked Pepper
- 1 and 1/2 cup Soft Cojita Cheese (Feta may be used as a substitute)
- 1 Cup Freshly Chopped Cilantro
Directions
- Preheat your BBQ Grill to the highest setting.
- Before peeling your corn, put them in the microwave on high for 8 minutes.
- Once ready, let cool.

- In a bowl, mix the mayonnaise, juice of your lime, and all the seasonings/spices together.
- Peel the corn and place on your Grill. Close the hood and rotate occasionally with tongs until lightly charred.
- After approximately 10 minutes, remove from Grill and immediately rub each ear with butter.
- Now using a brush (preferably rubber), coat your corn generously with the marinade you prepared.
- Crumble the Cojita cheese with your fingers and sprinkle on to your corn.
- Sprinkle Cilantro over your platter of corn and serve immediately.
